These Greek meatballs are the best of both worlds. The recipe is quick and painless enough that you can make them in a pinch on a weeknight, or, if you are hosting, you can dress them up to impress. The finished product looks fancier than the time and effort that went into it. And, no matter the occasion, they are delicious!

| Base | 1 cup dry Purple Rice |
| Protein | 1 lb ground beef (80 lean is better than 90) 1 lb ground pork 2 tablespoons Ras el hanout (Deliciouser Spice) Salt/Pepper/Garlic or garlic powder to preference |
| Sauce | 4 cups Bone broth 2 cups Pasture raised heavy cream – Kalona low temp pasteurized 1 cup whole milk yogurt Lemon (zest from the whole lemon; juice from half the lemon) 2 teaspoons Ras el hanout (Deliciouser spice) Salt/Pepper to taste |

| Add 2 C of water and 1 C dried purple rice to a saucepan. Bring to a boil. Cover and turn heat down to low and simmer for 45 minutes (or until water is gone and rice is cooked through). As your rice is cooking: Mix 1 lb of ground beef and 1 lb of ground pork together. Mix in 2 T of Ras el hanout spice. Salt, pepper and garlic to preference. (We use 1 teaspoon of each salt and pepper.). Form into balls, 1.5-2 inches in diameter. Cook the meatballs in a skillet or cast iron, turning occassionally, on medium-high heat, for approximately 20 minutes. Remove meatballs from pan. As your rice is cooking: Place 4 C bone broth in a saucepan on medium heat. Slowly stir in 2 C of the heavy cream. Slowly stir in 1 C of whole milk yogurt. Leave on medium heat, uncovered, stirring occasionally for 30 minutes. Add lemon zest from whole lemon and lemon juice from half of the lemon. Add 2 tsp Ras el hanout spice, and then salt/pepper to taste. To serve: Place 3-4 meatballs over a bowl of cooked rice, ladle sauce over the meatballs, and garnish with cherry tomatoes, cucumber and cheese, to your preference. | |
