(Bacon Lettuce Tomato & Goat Cheese)

It is one of those meals that often goes overlooked, but, then, if done right, you wonder why you don’t have them more often. | Preheat oven to 400 degrees. Cook a single layer of bacon to preference. I typically cook for 20 minutes give or take. While the bacon is cooking, toast the bread to preference. You can do this using a toaster, however, if you want to elevate your BLT, I recommend toasting the bread on the stove top. Turn the stove to medium-low. Lightly butter each side of bread. Place the slices of bread on a frying pan. Toast each side for a few minutes each. Slice the tomato (I prefer the tomato slices to be on the thin side). Then, assemble: Slather the toasted bread with goat cheese, and top with bacon, lettuce, and tomato. | |
